Quinoa Salad

Now that the weather is getting warmer, it's time for lighter fare. Try this quinoa salad recipe instead of serving pasta salad with your main dishes.

QUINOA SALAD

Prep time: 15 minutes

Cooking time: 0 minutes

Yields: 8 people

Ingredients: 

2 cups cooked quinoa
1/2 cup chopped radishes
1/2 cup chopped cucumber
1/2 cup chopped celery
1/2 cup chopped red onion
1/2 cup chopped fresh parsley
1/2 cup chopped red bell pepper
1 tablespoon olive oil
2 teaspoons balsamic vinegar

Directions: 

  1. Combine all ingredients together in a large bowl and mix well.

Notes: 

  • Garnish with cherry tomatoes and shredded garlic cloves and chill before serving.
