Chia-Flax AMAZING Blueberry Pancakes (wheat free)

I think I've had this for breakfast (and sometimes dinner and lunch) everyday for for almost 3 years- My favorite food of all time! Super easy and takes about 3-5 mins to make then 10 mins in the pan. I like to top with coconut butter! And if all you have in your kitchen is oats, then just use that in place of coconut flour/seeds- use 1/4 cup of oats.


Chia-Flax AMAZING Blueberry Pancakes (wheat free)

  • 3 egg whites
  • 1 whole egg
  • 2 Tbs oatmeal
  • 1 Tbs chia/flax seed mix
  • 1 Tbs coconut flour
  • 1/4 c. almond milk
  • 3  packets stevia
  • 1/2 blueberries (drained if using frozen fruit)


Super Simple! Combine all ingredients in blender & Blend until smooth.  Spray frying pan with a non-stick spray.  Poor batter into frying pan and cook on med heat until golden brown on each side.

Topping ideas:

1/2 c. fresh or frozen fruit of your choice blended or pureed with  2-3 T. water (or 2-3 T. yogurt or cottage cheese for a creamy fruit spread) and stevia to taste.  Warm in microwave for one minute if you choose.
